CHOICE Showcased at INNOVENT Forum 2025 – Advancing Sustainable Food Practices
CHOICE was thoroughly presented by its coordination team from the Institute of Communication and Computer Systems (ICCS) at the INNOVENT Forum 2025, held at JOIST Innovation Park in Larissa. The event provided an excellent platform to highlight CHOICE’s innovative research and explore how technology-driven insights can influence sustainable food habits and behaviors.
During the event, the ICCS team demonstrated its latest research on behavioral science and digital enablers, focusing on how Extended Reality (XR) and eye-tracking technologies can be used to encourage climate-conscious food choices. CHOICE’s participation aimed to engage experts, policymakers, and industry professionals in discussions about the role of digital tools in transforming food systems.
CHOICE Demo: Using Mixed Reality to Understand Food Choices
During the event, the CHOICE-related Mixed Reality (MR) Eye-Tracking study was demonstrated through the ICCS booth, allowing attendees to explore how visual stimuli and digital environments shape dietary decisions. This study, previously presented at EuroXR 2024, integrates eye-tracking technology with MR simulations to assess how food presentation, environmental impact metrics, and sustainability labels influence consumer behavior.
The CHOICE booth attracted over 1,000 attendees, including representatives from research organizations, universities, and private companies, who engaged with the demonstration and discussed its implications for food sustainability and consumer behavior.
The research presented at INNOVENT Forum 2025 emphasized the potential of MR-based educational tools to:
- Improve consumer awareness of food sustainability.
- Provide insights into behavioral drivers affecting food choices.
- Develop strategies for encouraging sustainable consumption through digital interventions.

ICCS Contributions and CHOICE’s Role in Digital Innovation
The ICCS team played a key role in demonstrating CHOICE’s advancements in immersive technology and behavioral science. Key contributors included:
- Spyros Bolierakis, XR Technical Coordinator, who showcased how Extended Reality (XR) can enhance sustainability education and influence food-related behaviors.
- Dimitris Maragkos, Communication and Dissemination Officer, who engaged attendees in discussions about CHOICE’s research objectives and the potential of digital tools in shaping sustainable consumption.

By participating in INNOVENT Forum 2025, CHOICE strengthened its connections with researchers, policymakers, and industry leaders, reinforcing the importance of technology-driven sustainability solutions in the food sector. The event provided a valuable opportunity to showcase how digital innovations can contribute to behavioral change and sustainability awareness.
